  • 2 Banana mashed
  • 1 cup Sugar
  • 1.5 cups Flour
  • 1 Egg
  • 1 Carrot (grated) or two small
  • 1 tsp Bicarbonate Of Soda
  • 1 tsp Mixed Spice
  • 85 g Walnut cut into small pieces
  • 90 g Butter

The Homestead Carrot and Banana Cake sounds like a bit of weird combination, but it really works and is so moist!  

This is a very old and revered recipe that you don’t really see that often in cookbooks or on recipe websites. But it should be as it is pretty darn wonderful.

Method

  1. Preheat oven to 150 degrees.

  2. Cream the butter & sugar until light and creamy.

  3. Whisk the egg and add to the butter mixture.

  4. Fold in grated carrot and mashed banana.

  5. Fold in plain flour, mixed spice, bicarbonate of soda and walnuts.

  6. Bake for about 1 hr to 1 ¼hrs.
