Hot Roast Pork Loin for Six People

This is the perfect sized roast pork to suit six people.  Sometimes pork is a tricky meat to cook – because it is so easy to over-cook and can go tough.  This way will guarantee crispy skin on top, and moist meat!

Method

  1. Preheat the oven to a hot 200 degrees.

  2. Place the pork loin roast into a baking tray.

  3. Place the potatoes around the roast.

  4. Bake at 200 degrees for 20 minutes or until the crackling on top starts to bubble.

  5. Turn down the heat to 140 degrees.

  6. Cook for one hour.  Let the roast rest before serving.
