How to Make Mexican Fritatta

The Mexican Quinoa just keeps going. This Mexican frittata will use the leftovers of the quinoa and makes enough for a meal for the family.

It makes a quick weeknight meal when served with salad too! who doesn’t love the taste of a Mexican style meal! with a blend of Jalapenos and quinoa, this frittata will melt in your mouth! all you have to do is mix it up and put in the oven! this is another recipe that can go pretty far, use it for lunches the next day!

Mexican Fritatta

Method

  1. Preheat the oven to 160 degrees.

  2. Mix all of the ingredients together in a bowl and place onto a lined baking tray.

  3. Bake for approximately 40 - 50 minutes until golden and firm to touch.

  4. Serve and Enjoy!
