  • Leftover Barbecue Chicken (whatever You Have On Hand)
  • 1 cup Grated Cheese
  • 2 tbsp Sour Cream
  • 1/2 Spanish Onion, Diced Finely
  • 1/2 Red Capsicum (diced Finely)

Well with our recipe for Leftover Chicken and Sour Cream Quesadillas, you can have dinner on the table in ten minutes flat!

Quesadillas are a traditional Mexican dish – but really – they are just a fancy word for Jaffles but using flatbread or tortillas instead of bread slices. You can use any sort of flatbread in this recipe – and we also utilise leftover barbecue chicken – so this is a perfect ‘Monday night’ meal.

 

Method

  1. Dice all of the leftover roast chicken and place it in bowl with the rest of the ingredients.

  2. Mix well.

  3. Spread the mixture evenly over half of the tortillas.

  4. Place another tortilla on top and place in a sandwich press for 5 minutes or until golden.

  5. Cut into four slices and enjoy piping hot.
