- 1/2 cup Lemon Juice
- 60 grams Butter

- Combine all the ingredients in a heatproof bowl.
- Whisk constantly over simmering water until the mixture thickens up and coats the back of a spoon.
- Remove from the heat and pour into a sterilised jar.
- When cool, label the lemon butter and add the date on it. Store in the fridge until required.
