  • 1 cup Baby Spinach

You’re going to love this Charcoal Chicken Pita!

I don’t know about you but on the days I just can’t be stuffed cooking but I don’t want full-blown take away I turn to my local charcoal chicken.

Unfortunately, my kids decided the old chicken, chips and coleslaw just didn’t cut it anymore. So I reinvented it!

And they love it! A good ol’ charcoal chook and pack of pita just became a perfect springtime dinner, school lunch, weekend lunch or better yet, picnic food!

Method

  1. Spread hummus on the base of the pita bread

  2. Top with baby spinach, spring onions, chilli, cabbage and chicken.

  3. Squirt with sriracha mayo and get stuck in! We generally fold the pita over like a taco, but hey, I won't even judge you if you use a knife and fork! (Okay, that a lie, I will judge you, I just won't tell you!)
