Lemons, butter and sugar as main ingredients, serving 4 people, this Luscious Lemon Curd Dessert recipe will keep  you warm in this cooler weather! I’m sure this is a crossbreed of self saucing pudding and chewy sponge!

Method

  1. Preheat oven to 150 degrees. If you have the option, turn your fan forced function off.

  2. Take a round 1 litre round casserole dish, this will double as your mixing bowl too. Using hand beaters, cream butter and sugar together in dish, add the egg yolks and beat again for 2 minutes. Add flour, milk and lemon juice and beat again for another 2 minutes.

  3. In a separate bowl or mix master beat egg whites until sift peaks form, 3-5 minutes. Using a spatula fold the egg whites through the lemon mix until well combined.

  4. Wipe the rim and inside edge of the dish with a wet paper towel, this will just make the presentation cleaner.

  5. Place casserole dish in oven for 25 minutes. Watching after the 20 minute mark as it can get very brown very quickly.

  6. Serve immediately and with ice cream or dollop cream if you fancy!

Recipe Hints and Tips:

  • Use icing sugar to dust, and serve with ice cream.
  • Luscious Lemon Dessert is not suitable for freezing and best consumed immediately or on the same day it was baked.
  • Don't be alarmed people it is really only 2 tablespoons of self raising flour for this recipe and it really works and it really tastes delicious! (I was a skeptic too!)
