Homemade Muesli Bars. Great for a healthy afternoon snack and especially good for the kid’s lunchboxes!!  You can make any flavour you like – here are some ideas if you are bored of the standard recipe:

  • Chocolate Chips

  • Almonds and Cranberries (not suitable for school)

  • Pepitas and Sultanas

  • Coconut Flakes and Honey

Ingredients

  • 2 cups Cornflakes
  • 2 cups Rice Bubbles
  • 1/2 cup Rolled Oats
  • 1/2 cup Coconut
  • 100 grams Butter
  • 2 tbsp Honey
  • 1/2 cup Sugar
  • 1/2 cup Sultanas




Method

  1. Pre heat oven to 170 degrees (fan forced).
  2. Line a 20cm x 30 cm baking pan.
  3. Mix dry ingredients in a large bowl.
  4. In a saucepan over low heat melt the butter, honey and sugar.
  5. Add to dry ingredients and mix well.
  6. Press into tray and bake for 15 mins.
  7. Refrigerate until cool.
  8. Cut into muesli bar size pieces.

Notes

Recipe Hints and Tips:

  • Muesli Bars are not suitable to freeze.
  • Will last for one week in the fridge in an airtight container. Will last four days at room temperature in an airtight container.
