For our final recipe from the girls we have very Greek Marinated Lamb Cutlets.

Method

  1. In a mixing bowl, combine the lemon juice, salt, pepper, oregano and olive oil.

  2. Add the lamb cutlets and turn to coat.

  3. Cover with cling wrap and place in the fridge to marinate for 30 mins.

  4. Place a frying pan over high heat, drizzle with olive oil and add the lamb cutlets.

  5. Cook  for 2 mins on each side for rare, then rest the lamb for 10 mins in a warm place.

Recipe Hints and Tips:

  • You can cook the lamb for a little longer if you prefer well done.
