  • 3 cups Chicken cooked, diced
  • 2 cups Brown Rice cooked
  • 1/2 cup Celery diced
  • 1/4 cup Spanish Onion diced
  • 3/4 cup Pineapple diced
  • 1/2 cup Cashews
  • 1/4 cup Red Capsicum
  • Dressing
  • 3 tbsp Olive Oil
  • 2 tsp Honey
  • 1/2 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Curry Powder
  • 1/2 tsp Mixed Spice
  • 5 tbsp Lemon Juice
  • 2 tbsp Pineapple Juice (from Tin)
  • 2 tbsp White Vinegar

 This Hawaiian Chicken Salad will spice up your lunch or a light dinner.

We love a good caesar salad, but it can get boring sometimes! So it’s time to try out something new and this salad is just the right change. It’s beautiful on the table, and will be the star of your feast!

Method

  1. Mix chicken, rice, celery, onion, pineapple, cashews and capsicum in a bowl.

  2. Add all dressing ingredients together in a bowl. Mix well.

  3. Pour dressing over chicken salad and toss lightly.

  4. Hawaiian Chicken Salad is not suitable to freeze.

  5. Add oranges, cranberries or cashews if you like.
