The dish is also full of healthy vegetables, including carrots, celery, and peas, of course if you don’t have everything that’s okay. All in all it’s still going to be full of flavour and fun to eat.

For an extra touch of flavour, you can add a sprinkle of feta cheese on top before serving. This casserole is sure to become a family favourite.

Method

  1. Place the flour, salt and pepper on a plate and toss the lamb chops in the flour to lightly coat.

  2. Heat 1/3 of the olive oil in a frypan and brown the lamb chops in batches, adding more oil as needed. Set the lamb chops aside.

  3. Add the onion, garlic and vegetables to the pan and cook until the mixture has softened. Add the tomato paste and red wine, stock cubes and two cups of water.

  4. Stir to combine and bring the mixture to the boil. Reduce heat and add the lamb chops.

  5. Cover and simmer on low for one hour and thirty minutes stirring well every 15 minutes or so.

  6. Remove the lid and simmer to reduce the liquid.

  7. Brown the chops first then mix the remaining ingredients and add to the slowcooker.

  8. Cook on low for 6 hours.
