Ingredients

  • 1 cup Lamb (cooked) diced
  • 1 Punet Cherry Tomatoes
  • 1/2 cup Cheese (feta) crumbed
  • 1/4 cup Olives pitted and halved
  • 1 cup Frozen Spinach thawed and water squeezed out
  • 1 Garlic Cloves minced
  • 1 Egg
  • 4 Sheets Puff Pastry
  • 1 Egg beaten to brush pastry


Method

  1. Place, lamb,tomatoes,feta, olives, spinach, garlic, and 1 egg in a bowl and stir until well mixed.
  2. Cut pastry sheet into 4 triangles and place 1 heaped tablespoon of mix onto pastry and fold in half to make a triangle. Press edges together with fingers then seal together by pressing a fork into the edges to press together again.
  3. Brush with egg and place on a lined baking tray. Repeat until all pastry and mix is used.
  4. Bake for 20-25 minutes until golden brown.

Recipe Hints and Tips:

  • Mediterranean Parcels are suitable for freezing for up to 3 months or keep refrigerated in an airtight container for 2 days.
