  • 4 tbsp Olive Oil
  • 1 bunch Chives
  • 2 tsp Blue Cheese
  • 1/2 Cup Sour Cream

Mini Baked Potato Bites are very simple to make and easy to eat. They make for a very elegant starter for a party and you can make them as simple or as fancy as you like!

Method

  1. Preheat the oven to 180 degrees.

  2. Line baking tray with baking paper.

  3. Wash the baby potatoes well and dry.

  4. Pop them in a bowl with the olive oil and season well to taste.

  5. Coat evenly and place them spaced apart on the baking paper.

  6. Cook for 45 - 50 minutes or until the potatoes are soft to the touch and the skin is starting to brown.

  7. Mix together the sour cream and blue cheese to get an even mix.

  8. Gently cut a small hole in the top of each potato and spoon in the cream mixture.

  9. Top with the chives and serve immediately.  Can be served hot or at room temperature.

Recipe Hints and Tips:

  • Mini Baked Potato Bites are not suitable to freeze.
  • You can use any filling you like - just keep it easy!  Beetroot and cream cheese is delicious!
