  • 30 g Frozen Berries we used mixed berries
  • 1/4 cup Ground Flax (also known as linseed)
  • 1/2 tsp Baking Powder
  • 1 tbsp Maple Syrup
  • 1 Egg White
  • 1/2 tsp Nutmeg

Look Out! Its a healthy twist on our usually naughty Cake In A Mug series, this Mixed Berry Cake In A Mug contains no flour or refined sugar.

As always, with most cakes in mugs, you are better off using a large mug, combining the ingredients in another bowl or jug and pouring it into the mug. I keep batches of the dry ingredients pre-mixed in sandwich bags and add the wet ingredients when its time to bake.

 

Method

  1. Combine all ingredients in mug and microwave for 1 and a half minutes.

  2. Top with natural yoghurt.

  3. You can use a combination of berries and spices - try blueberries and nutmeg, or strawberries and cinnamon

  4. Serve as a warm breakfast - full of fibre!
