When you’re looking for a wholesome and chewy biscuit, these Oat and Peanut Butter Biscuits fill the void. They’re super chewy and flavourful, combining the soft nourishment of peanut butter with wholesome oats and pumpkin seeds. While these aren’t super healthy or qualify for a clean living label, they are delicious with a bit of substance.

Method

  1. Preheat oven to 190 degrees and prepare a baking sheet by laying with baking paper.

  2. In a bowl mix together the cinnamon, flour and baking powder. Meanwhile in another bowl, using an electric mixer, beat together the peanut butter, butter, brown sugar, and vanilla extract.

  3. To this mix add the eggs one at a time, beating after each. Then gradually add in the flour.

  4. Using a wooden spoon or spatula, fold through the pats and pumpkin seeds

  5. Roll about a tbs worth of the dough mix in your hands and place onto your baking tray. Flatten slightly with a spoon or your hand.

  6. Bake for 12-15 minutes or until colouring is light brown. Cool for a few minutes on the baking sheet before cooling completely on a rack.
