Ingredients
- 4 Eggs
- 3/4 cup Caster Sugar
- 4 Passionfruits
- 100 grams Unsalted Butter

Method
- Whisk together the eggs and caster sugar in a microwave proof jug until well combined. Stir in the pulp of four passionfruit and the chopped butter.
- Microwave uncovered at 30% for 7 - 10 minutes, whisking every minute until mixture is thick enough to coat the back of a wooden spoon.
- Divide into hot sterlised jars. Seal and refrigerate. Makes 1.75 cups.
To sterilise jars:
- Wash in warm soapy water or put through the dishwasher, rinse in hot water. Place on baking tray and place in the oven at 120 degrees for 20 minutes.
- Makes a terrific gift!
