Ingredients

  • 2 cups Self Raising Flour
  • 1/2 cup Custard Powder
  • 1/3 cup Pink Lemonade
  • 80 grams Butter
  • 3/4 cup Sugar

Pink Lemonade Icing

  • 1 1/2 cups Icing Sugar
  • 1 tbsp Pink Lemonade
  • 1/2 tsp Pink Food Colouring




Method

  1. Cream butter and icing sugar using an electric mixer until smooth.
  2. Add half a cup of flour at a time, mixing well each time.
  3. Add the custard powder and mix in well.
  4. Add Pink lemonade mix well and combine until dough like.
  5. Kneed with hands to form a soft dough then break off a teaspoon of mix and roll into a ball.
  6. Place ball onto a lined baking tray and flatten with the back of a fork (this will give you a pretty pattern on the top of your biscuit).
  7. Bake for 10 minutes, they should be just golden brown on the top.
  8. Allow to cool then spoon 1 teaspoon of icing on the flat side of a biscuit and join another biscuit together. Dust with icing sugar.

Pink Lemonade Icing

  1. Mix all ingredients together in a bowl until smooth using a wooden spoon.

  • Pink Lemonade YoYo's are suitable for freezing for up to 1 month. Keep in an airtight container for up to 1 week.
