Ingredients

  • 1/4 cup Diet Cranberry Juice
  • 2 tsp Caster Sugar
  • 250 grams Strawberries hulled, quartered
  • 3/4 cup Quinoa (150 grams)
  • 3/4 cup Rice Milk (180 mls)
  • 1/2 tsp Cinnamon


Method

  1. Place sugar and and cranberry juice in saucepan, on low heat and stir until sugar is dissolved.
  2. Slowly bring to boil and cook for 2 minutes.
  3. Add strawberries and simmer slowly for 2 minutes until they are softened.
  4. Set aside to cool.
  5. Rinse quinoa under water and drain.
  6. In a saucepan add the quinoa and 1 cup of water, bring it to the boil and let simmer for 15 minutes until quinoa is tender.
  7. Add the milk and cinnamon to the quinoa and cook for 5 minutes until it is thick and creamy.
