Ingredients

  • 150 g Unsalted Butter
  • 150 g Golden Syrup
  • 100 g Treacle
  • 60 g Brown Sugar
  • 150 ml Milk
  • 250 g Plain Flour
  • 2 Large Eggs
  • 1/4 tsp Bicarb Soda
  • 4 tsp Ground Ginger
  • 1 tsp Ground Mixed Spice
  • 1 tsp Ground Cinnamon
  • 25 g Oatmeal
  • 50 g Stem Ginger In Syrup drained and chopped

Spicy Ginger Loaf is the grown ups version of Gingerbread men 🙂 It has all those yummy spices that make your senses sing. You won’t be able to just have on slice.

Method

  1. Preheat the oven to 150 degrees.

  2. Grease and line a 1kg loaf tin.

  3. Place the butter, golden syrup, treacle and sugar into a saucepan.

  4. Heating  gently, stir constantly, until melted.

  5. Remove from the heat and add the milk.

  6. Stir in the eggs.

  7. Sift the flour, bicarbonate of soda, ginger, mixed spice and cinnamon into a mixing bowl and stir in the oatmeal and chopped stem ginger.

  8. Make a well/hollow in the middle of the flour mixture.

  9. Pour in the melted mixture.

  10. Beat well with the back of a wooden spoon to a smooth consistency. pour into the tin

  11. Bake for 1 1/2 hours, or until the loaf is risen and firm to the touch.

  12. Stand in the tin, on a wire rack, to cool for 20 minutes, then turn out onto the rack to cool completely.

  13. The loaf may be baked in an 18 cm square cake tin.

  14. Spicy ginger Loaf is suitable for  freezing for up to three months.
