This flavourful and fresh Sublime Lime Cake is super easy to make.

If you’re craving for a fruity cake that will satisfy your sweet tooth, then you shouldn’t definitely miss this Sublime Lime Cake that is just so perfect for your afternoon tea! All the ingredients are so simple and you can make this in under 1 hour. You can store this in the fridge for up to 2 months.

Method

  1. Preheat oven 180 degrees.

  2. Mix cream, butter, and 1 cup of sugar.

  3. Beat in 3 yolks. Mix in lime zest.

  4. Add 1 cup flour and 1/2 cup buttermilk and mix.

  5. Repeat with remaining 1 cup flour and 1/2 cup buttermilk, and mix.

  6. Beat egg whites till they peak and fold into cake mix.

  7. Pour in baking tin. Bake for 40 minutes, or until cooked through.

  8. When the cake is nearly done, put all syrup ingredients into a saucepan and stir until boiling.

  9. While cake is still hot, and before you take it out of the tin, slowly pour the hot syrup over it - the hot cake will soak it up like a sponge.
