  • 500 g Chicken Meat minced
  • 1/2 cups Bread Crumbs
  • 2 tbsp Onion finely chopped
  • 1 tbsp Parsley
  • 1 Garlic Cloves
  • 1 Egg
  • 3 tbsp Olive Oil
  • 400 g Jar Tomato Pasta Sauce
  • 100 g Fresh Mozzarella Cheese
  • 100 g Parmesan Cheese
  • 1 tsp Lemon Zest

Good old spaghetti and meatballs may be good but it can also be, well, old and boring.

Give your old meatballs dinner a makeover and try this recipe for Chicken Parmesan Meatballs. Just another fantastic “balls” recipe brought to you by Stay At Home Mum!

Method

  1. Preheat oven to 200 degrees Celcius.

  2. Line a baking dish (ceramic or metal) with alfoil and grease slightly.

  3. Mix chicken mince, breadcrumbs, onion, parsley, parmesan cheese, garlic, egg and lemon zest in a bowl and shape into balls.

  4. Place onto alfoil in baking dish.

  5. In a small bowl, add 2 tablespoons of your pasta sauce and a teaspoon of olive oil.

  6. Mix and brush over each ball.

  7. Bake, covered with alfoil for 15 minutes.

  8. Mix the rest of the oil and pasta sauce together and cover the balls in the rest of the sauce.

  9. Sprinkle with mozzarella cheese and pop back in the oven for 5 - 10 minutes until the cheese has melted.

  10. Serve over spaghetti with some crusty bread!

  11. Chicken Parmesan Meatballs can be frozen as just meatballs, without the sauce.
