If you’re looking for something simple and tasty for your next gathering, these Vegetarian Dill & Cheese Pasties are worth considering. They’re very easy to put together, but have great fresh dill flavours and the vying textures of soft ricotta and crunchy puff pastry. Yum!

Method

  1. Place ricotta on some paper towel in a colander and allow to drain over a plate for a few minutes.

  2. Once partly drained, mix the cheese with the butter and half of the beaten egg. Then stir through the dill.

  3. Roll out the puff pastry and cur into squares about 10cm wide. You should get about 15 small pasties.

  4. Place a few teaspoons of the filling in the middle of a pastry squares. Brush around the edges with water and fold over into a triangle. To seal, press the edges with a fork or fold them. Repeat with the other pastry squares.

  5. Chill for an hour or more in the fridge.

  6. When ready to bake, heat the oven to 220 degrees, brush the pasties with the rest of the egg mixture and bake for about 15 minutes, or until puffed and golden.
