  • 2 tbsp Fresh Orange lemon or lime juice
  • 1/2 cup Walnuts chopped

Crunchy Waldorf Salad Boats

When I think Waldorf Salad, I think crunchy fresh apples and walnuts – and even though this salad is now considered tremendously old fashioned, it is still a firm family favourite!

But when served in Cos Lettuce leaves so you can just pick up a ‘boat’ and inhale it – even better!

Method

  1. Core the pink lady apples and chop into pieces.

  2. Place the apple pieces in a small bowl and mix with the orange juice to prevent browning.

  3. Lay the freshly washed cos lettuce on a place and combine the remaining ingredients before placing them on top of the lettuce.

Recipe Hints and Tips:

  • Waldorf Salad is best served immediately.
  • Mayonnaise can be substituted with natural yoghurt or sour cream.
  • Make your own mayonnaise, it's easy and much nicer than the shop bought variety!
