This Apricot Jam only needs 3 ingredients, so easy to make and will last you for months!

How amazing is that?

My neighbour’s apricot tree is brimming with fruit and I have been told for years to help myself. Well this year I have and the resulting Apricot Jam is delicious.

Method

  1. Halve and remove the stones from the apricots.

  2. Place them into a large pot and add the water.

  3. Allow to boil and add sugar.

  4. Allow to simmer until reduced by about half.

  5. Once cooked and thickened place a small amount onto a spoon and into the fridge.

  6. If this sets in a few minutes to firm enough you know you are done.

  7. Place into clean recycled glass jars and leave 2cm at the top seal with the lid.

  8. The hot jam will expand the hot air and then contract sealing the lid.

Recipe Hints and Tips:

  • Apricot Jam is not suitable to freeze.
  • Will last three months in a sealed jar.
