Ingredients

  • 1 cup Plain Flour, Sifted
  • 125 grams Butter
  • 2 Eggs
  • 3/4 cups Brown Sugar
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 cup Self Raising Flour
  • 250 grams White Chocolate Buds
  • 3/4 cups Macadamia Nuts

Method

  1. Line two large baking trays with baking paper and set aside.
  2. Preheat the oven to 160 degrees.
  3. Beat together the softened butter and brown sugar until thick.  Add the eggs and vanilla extract and mix through.
  4. Sift together the plain flour, self-raising flour and salt.
  5. Fold in the flour into the butter mixture until just combined.
  6. Stir in the white chocolate buds and macadamia nuts.
  7. Roll into 2cm balls, place a maximum of 12 on the baking tray, and use a fork or similar to 'press' the biscuit until flattened.
  8. Bake for 16 minutes or until just golden.  Allow the cookies to cool on the tray.

Notes

Storage:

Keep the cooled biscuits in a sealed tin for up to five days.
