Coffee Cake In A Mug

Delicious coffee cake served in a mug with whipped cream and chocolate sprinkles. Perfect for a quic.

Feeling like cake with your coffee? Or cake in your coffee cup? This super-yum Coffee Cake has actually no coffee in it, but is the best accompaniment to a warm cuppa on a cold night!

As always, with most cakes in mugs, you are better off using a large mug, combining the ingredients in another bowl or jug and pouring it into the mug. I keep batches of the dry ingredients pre-mixed in sandwich bags and add the wet ingredients when its time to bake.

Ingredients

  • 1 tbsp Butter-softened

  • 2 tbsp Sugar

  • 1 number Egg

  • 2 tbsp Sour cream

  • 0.5 tsp Vanilla essence

  • 0.25 cup Plain flour

  • 0.125 tsp Baking Powder

  • 1 tbsp Brown sugar

  • 2 tsp Cinnamon

Directions

  • Combine butter, sugar, egg, sour cream and vanilla in a bowl.
  • Add flour and baking powder and mix to make a smooth batter.
  • Spoon into large mug.
  • Sprinkle brown sugar and cinnamon over the top of the batter
  • Microwave for between 1 minute 30 seconds and 3 minutes, cooking time will depend on how cooked you like your mug cakes.
