  • 5 ml Olive Oil
  • 1.5 Garlic
  • 45 g Tinned Tuna
  • 1/2 g Chilli Powder
  • 30 g Baby Spinach
  • 100 g Chopped Tomatoes
  • 65 ml Water
  • 15 g Kalamata Olives
  • 5 g Capers
  • 10 g Parsley
  • 65 g Wholemeal Spaghetti
  • 10 g Anchovies

Low Fat Pasta Puttanesca

Forget what you’ve heard about carbs, low fat pasta recipes will have you losing weight the healthy way, without sacrificing your favourites. This Pasta Puttanesca combines all the best ingredients for a well balanced, healthy dinner option.

Method

  1. Drain and finely chop the anchovies, chop the olives, rinse the capers and chop the parsley.

  2. Bring a large pot of water to boil

  3. In a separate saucepan, over medium-low heat, add the oil and crush in the garlic to sautee for 1 min. Add anchovies to the pan, pressing with the back of a spoon until they melt into the oil.

  4. Add half the tuna, the chilli, baby spinach, tomatoes and water and simmer for 12 15 minutes until starting to thicken. Gently fold through olives, capers and remaining tuna. Remove from heat and stir through half the parsley.

  5. Add the spaghetti to the boiling water and cook, according to packet instructions until al dente

  6. Place spaghetti in a bowl and serve the sauce on top. Sprinkle the remaining parsley over the sauce.
