Mandy’s Moist Marinated Chicken

Ingredients
4 number Chicken Breast
Marinate
0.5 tsp Olive Oil
1 large Lemon, Zested and Juiced
1 tsp Garlic salt
1 tsp Tuscan seasoning
1 tsp Thai seasoning
1 tsp Portuguese Chicken seasoning, medium
Directions
- Pour all marinate ingredients into a small jug and stir.
- Cut three slices into Chicken breast across the grain and not all the way through. This will ensure the marinate goes into the chicken. You can also see when your chicken is cooked along with making a pretty pattern when it’s golden brown.
- Place the chicken into a GLAD ZipLock Bag (2 fit perfectly into a sandwich size bag) pour the marinate in, if using two bags half the marinate in each bag.
- Squeeze out the air and seal bag. Place in fridge to marinate for an hour or even overnight.
- Heat frypan over high heat then place the chicken breast into frypan and pour remaining marinate over chicken.
- Turn chicken after approximately 3 minutes, it should be nice and golden brown.
- Once both sides are golden brown turn the heat to medium to low and place a lid on your frypan and allow to cook through. You will need to turn the chicken 1-2 times, this should take another 10 minutes approximately.
- When your chicken is golden brown drain on paper towel and serve with a garden salad.
Notes
- Mandy’s Moist Marinated Chicken is not suitable for freezing, keep in fridge for up to 1 day uncooked in a GLAD ZipLock Bag or cooked for 2 days in an airtight container.
