No Bake Cheesecake

No Bake Cheesecake…Another one of my Mum’s awesome recipes! Sweet and easy!  If you aren’t keen on making a biscuit base, just buy a pre-made tart shell from the bakery section of your local supermarket – that’s a quick ‘cheating’ way of making it even faster!

Ingredients

  • 150 grams Butternut Biscuits
  • 60 grams Butter melted
  • 125 grams Cream Cheese light
  • 1/2 cup Sugar,caster
  • 1 tsp Gelatine Powder
  • 1 and 1/2 cup Evaporated Milk
  • 1 tsp Vanilla Extract
  • 1/4 cup Water hot

Method

  1. In a food processor, blend the biscuits until they resemble breadcrumbs.
  2. Add the melted butter and press into a grease springform pan (22cm).
  3. With electric beaters, beat the cream cheese and sugar.
  4. Gradually add the evaporated milk and vanilla.
  5. Dissolve the gelatine into the hot water and mix through the cheesecake mixture.
  6. Pour the mixture into the springform pan and refrigerate until firm.

Notes

Is delicious served with Raspberry & Marshmallow Sauce!

  • No Bake Cheesecake is not suitable to freeze.
