No Bake Cheesecake…Another one of my Mum’s awesome recipes! Sweet and easy! If you aren’t keen on making a biscuit base, just buy a pre-made tart shell from the bakery section of your local supermarket – that’s a quick ‘cheating’ way of making it even faster!

Ingredients
150 gram Butternut biscuits
60 gram Butter-melted
125 gram Cream Cheese-light
0.5 cup Sugar,caster
1 tsp Gelatine powder
1 and 1/2 cups Evaporated milk
1 tsp Vanilla extract
1/4 cups Water-hot
Directions
- In a food processor, blend the biscuits until they resemble breadcrumbs.
- Add the melted butter and press into a grease springform pan (22cm).
- With electric beaters, beat the cream cheese and sugar.
- Gradually add the evaporated milk and vanilla.
- Dissolve the gelatine into the hot water and mix through the cheesecake mixture.
- Pour the mixture into the springform pan and refrigerate until firm.
- Is delicious served with Raspberry & Marshmallow Sauce!

- No Bake Cheesecake is not suitable to freeze.
