We love homemade mayonnaise, particularly when it’s this Super Creamy Mayonnaise. Not only does this mayonnaise have a fantastic flavour and texture, it also ends up being much better for you than store-bought mayonnaise. Watch the quality of your eggs, and make sure you use a decent olive oil, for the best flavour possible!

Super Creamy Mayonnaise

Method

  1. In a food processor, or using a container and stick blender process the egg yolks, vinegar, salt and pepper until well combined.

  2. Keep the processor on, and gradually add the olive oil in a steady even stream until mixture is thick and creamy.

  3. Then, add the mustard and lemon juice and mix until just combined. This recipe should yield about 1.5 cups.
