We love homemade mayonnaise, particularly when it’s this Super Creamy Mayonnaise. Not only does this mayonnaise have a fantastic flavour and texture, it also ends up being much better for you than store-bought mayonnaise. Watch the quality of your eggs, and make sure you use a decent olive oil, for the best flavour possible!

- 3 Egg Yolk
- 1 tbsp White Vinegar
- 1 tsp Salt
- 1/4 tsp White Pepper
- 1 cup Olive Oil
- 1 tbsp Dijon Mustard
- 1 tbsp Lemon Juice
- In a food processor, or using a container and stick blender process the egg yolks, vinegar, salt and pepper until well combined.
- Keep the processor on, and gradually add the olive oil in a steady even stream until mixture is thick and creamy.
- Then, add the mustard and lemon juice and mix until just combined. This recipe should yield about 1.5 cups.
