  • 1 cup <a Title="Baked Three Cheese Pasta" Href="http://www.stayathomemum.com.au/recipes/pasta-rice/baked-three-cheese-pasta/" Target="_blank"> Macaroni Noodles</a> dried
  • 1/2 cup Egg Mayonnaise
  • 200 g Tuna drained and flaked
  • 1 Celery Stick chopped finely
  • 1 Small Tin Corn Kernels drained
  • 1 bunch Shallots (to Sprinkle) chopped finely

Who is a fan of Tuna Salad for lunches?

I’m not a huge fan of tuna on its own, kinda reminds me of cat food. However, quite often I buy those little tins of ‘tuna salad’ with tuna, corn kernels and mayonnaise and I love it smothered on fresh bread with butter and it is totally divine.

But at $1.50 or so a can – it can really add up. So I thought, why not make it at home? Here’s how to make it (I bulk it up even further with pasta so it can be a meal on its own!) – and it lasts up to three days in the fridge!

Method

  1. Cook the pasta according to the directions and drain well.

  2. Mix all the ingredients together in a bowl and spread on fresh bread or serve as a light meal.

  3. Cheap, frugal and delicious!

  10. To store, seal in an airtight container in the coldest part of the fridge for up to three days.
