I went to Woolworths a few weeks ago and they had a packet of Vanilla Almonds. They were the best nuts I have ever put in my mouth – totally mouthwateringly delicious! Unfortunately, they were not good for my waistline, hip pocket or skin. The Cinnamon Roasted Almonds is a homemade version and is a lot cheaper, but is guaranteed to make your thigh gap disappear like magic! A little nut with a lot of crunch.

Cinnamon Roasted Almonds

 

Method

  1. Preheat the oven to 180°C.

  2. In a large bowl, stir together the cinnamon, sweetener, and salt.

  3. Place the almonds in a single layer on a rimmed baking tray, and bake at 180°C for 5 minutes.

  4. Remove the tray from the oven, shake it back and forth to move around the almonds, and continue to bake for another 5-7 minutes, or until the almonds are lightly fragrant and toasty.

  5. Immediately mist the nuts with the nonstick cooking spray.

  6. Shake the tray a few times, and spray again.

  7. Pour the nuts into the bowl with the cinnamon mixture, and toss until completely coated.

  8. Let the nuts cool completely to room temperature before transferring to an airtight container.
