Ingredients

  • 200 grams Butter
  • 50 grams Coconut Oil cold
  • 1 1/4 cups Brown Sugar packed
  • 1/2 cup White Sugar
  • 2 cups Plain Flour
  • 1 tsp Baking Powder
  • 1 tsp Bicarb Soda
  • 1 3/4 cups Rolled Oats
  • 1 1/4 cups Dessicated Coconut
  • 1 1/2 tsp Vanilla Essence
  • 2 Eggs


Method

  1. Preheat oven to 180 degrees.
  2. In a medium mixing bowl cream together the butter, coconut oil and sugars until soft. Add the eggs and vanilla until well combined. Set aside.
  3. In another bowl, mix together the plain flour, baking powder, bicarb soda and oats until well combined. Mix through the coconut as well.
  4. Pour the dry ingredients into the wet ingredients and mix until combined and moist.
  5. Spoon onto a prepared baking tray, making sure each one is about 3cm apart.
  6. Bake for 10 minutes, or until golden. Remove from oven immediately, as over cooking will make them too hard.
