  • 1000 g Lamb Mince
  • 1/4 tsp Dried Chili Flakes
  • 1.5 tbsp Fresh Mint Leaves chopped
  • 2 tbsp Fresh Parsley Leaves chopped
  • 2 tsp Paprika
  • 1/2 tsp Ground Ginger
  • 2 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 2 Lemon cut into wedges, to serve
  • 1 Brown Onion chopped

When there’s lamb mince in the freezer, the recipe you want to use is this Super Easy Lamb Kofta. Not only are these lamb kofta some of the most delicious (in our humble opinion), this recipe is also really simple. Even if you’ve never made kofta before, you definitely won’t struggle with it.

Remember to pre-soak your bamboo skewers to avoid them shattering during the process. You’ll need 15 for this recipe (not included on recipe list).

Method

  1. In a bowl mix together the garlic, onion, chilli flakes, mint, parsley, paprika, ginger, cumin and coriander. Combine well.

  2. Sprinkle this mixture over your lamb mince, and combine it well using your hands. The spices should be really well distributed in the mince.

  3. Using your hands, shape about 1/4 cup of lamb mince into kofta shape that you can thread onto your skewers. Place your 15 skewers on a baking tray, cover, and pop in the fridge for 20 minutes until firm.

  4. Heat an oiled BBQ place or skillet on high. Add the kofta and reduce heat to medium-low. Cook, turning occasionally, for 10-15 minutes, or until cooked through. Transfer to a baking tray, cover with foil and rest for 5 minutes prior to serving.
