Ingredients

  • 3 cups Plain Flour
  • 1 tsp Salt
  • 1 tsp Bicarbonate Of Soda
  • 2 tsp Ground Cinnamon
  • 1/2 tsp Baking Powder
  • 1/2 tsp Arrowroot Powder
  • 1 cup Apple Sauce unsweetened
  • 1 cup Brown Sugar
  • 3/4 cups Vegetable Oil
  • 2 tsp Vanialla Essence
  • 2 1/2 cups Zucchini grated

Who doesn’t love a win when it comes to their kids? With this Vegan Zucchini bread, the kids will be getting a fix of vegetables in this delicious and very healthy bread, winners all around!

Method

  1. Preheat oven to 165 degrees.

  2. Flour and grease two bread tins 23 x 13 cm.

  3. Add into a bowl flour,salt, bicarb soda,cinnamon, baking powder and arrowroot, mix until well combined, leave aside.

  4. Whisk in a bowl apple sauce, brown sugar, vegetable oil and vanilla essence together until smooth.

  5. Add flour mixture folding it in.

  6. Add grated zucchini the mixture will moisten.

  7. Divide the batter equally into the prepared tins.

  8. Place into the oven to bake for about 70 minutes.

  9. Let the bread cool in the tins for  about 10 minutes, then transfer to a cooling rack to completely cool.

Recipe Hints and Tips:

  • Vegan Zucchini Bread can be frozen and can last (if well wrapped) for 5 days.
