Ice Cream and Anzac Biscuits, you can’t get much easier than that!
Scoop 1 tablespoon onto the base of one Anzac biscuit, sandwich another cookie on top and place in freezer while preparing the remaining cookies.
Repeat until all 6 Anzac Ice Cream Sandwiches are made.
