Blue Cheese Burgers. I love burgers and I love blue cheese so this is a schmancy burger to dazzle your taste buds!

Method

  1. Preheat oven to 170 degrees.

  2. Place pumpkin slices on a lined tray, lightly spray with oil season with salt and pepper and bake for 15 minutes. Turning once.

  3. Place mince, milk, Worcestershire, egg and breadcrumbs together in bowl, mix well (I used my hands, but it can get quite messy so feel free to use a fork or wooden spoon).

  4. Roll into 6 patties, stuff centre with a 1 tablespoon of blue cheese.

  5. Place in fry pan over medium to high heat and cook for 3-4 minutes each side.

  6. Cook bacon rashes in fry pan (no need to clean, the pattie juices add that little bit more flavor) for 2 minutes on each side. Set aside.

  7. Put brown sugar, butter and onion in the fry pan (yep still no cleaning, flavor making!) and over medium heat stir until soft and caramelised.

  8. Cut bread rolls in half and top with cheese.

  9. Melt under grill for 2 minutes until just golden.

  10. Top cheese with pattie, onion, bacon, pumpkin, rocket and tomato.

  11. Put the lid on your roll.

Recipe Hints and Tips:

  • Blue Cheese Burger patties are suitable to freeze for up to three months.
  • You can also make them a day in advance then reheat before serving.
