  • 1 tbsp Olive Oil
  • 1 Onion diced
  • 2 Garlic Cloves minced
  • 700 g Butternut Squash diced
  • 3 Celery Stalks chopped into small pieces
  • 4 cups Chickpea
  • 800 g Diced Tomatoes
  • 2 cups Vegetable Stock
  • 2 tsp Chili Powder
  • 1.5 tsp Ground Cumin
  • 2 tsp Salt

Method

  1. In a large pot, heat the olive oil and then add the onion, cooking until soft. Add the minced garlic, and cook for another minute or two.

  2. Add the chopped pumpkin and celery, stirring to allow them to heat.

  3. Add the rest of the ingredients into the pot and simmer for 30-40 minutes, until all the vegetables are tender and soft. If you're concerned about the chickpeas being too soft, add them later.

  4. Serve warm with rice, bread or the grain of your choice.
