Melt butter in a large saucepan. Add marshmallows and vanilla and stir constantly over a low heat until well combined and melted.
Remove from heat and add cereal. Stir until well coated.
Press mixture very firmly into a lined square pan.
Refrigerate until set.
Cut into 12 bars.
Melt chocolate in a glass bowl over a saucepan of simmering water.
Pour sprinkles onto a plate. Dip half of each bar into chocolate, turn to coat well, briefly drain off excess chocolate then immediately place onto plate of sprinkles.
Turn to coat with sprinkles, working quickly so the chocolate doesn't set.
Place onto a lined baking tray and refrigerate until set.
