  • 200 g Dark Chocolate 70% cocoa solids minimum
  • 1 tbsp Almond Milk
  • 3 Eggs
  • 1/4 tsp Salt
  • 80 g Almond Flour
  • 10 Dates Medjool, pitted, medium sized
  • 80 g Almond Butter

We like a good fudge brownie as much as the next person, but when we’re in the mood to be more health conscious we opt for these Dark Choc Date Almond Butter Brownies instead. Unlike normal brownies these are packed with protein from the almond butter and flour, as well as more natural sugars from dates and dark chocolate. Definitely worth a try!

Method

  1. Preheat the oven to 180 degrees and line a baking pan with baking paper.

  2. Soak the dates in boiling water for several minutes.

  3. Chop the chocolate and place in a bowl over a simmering pan of water. Add the almond milk and allow to melt and combine. Once melted, take the chocolate off the heat and set aside.

  4. Drain the water off the dates and puree in a food processor until nice and smooth.

  5. Into the melted chocolate whisk the almond butter, then fold the date puree through the chocolate mix. One by one, beat in the eggs, allowing each one to fully incorporate before adding the next one.

  6. Fold through the salt and almond flour last, then pour the entire mix into the prepared pan and bake for 20-25 minutes, or until brownie is just set. Allow to cool fully before removing from pan, cutting and serving.
