  • 2 Kg Prawns (shelled And Deveined)
  • 450 g Scallops
  • 3 Limes juiced
  • 3 Lemons juiced
  • 1 small Red Onion diced
  • 1 Cucumber peeled and diced
  • 1 Tomato coarsely diced
  • 1 Jalapeno diced
  • 1 bunch Fresh Coriander chopped
  • 1 tbsp Olive Oil
  • 1 tbsp Salt
  • 1 tsp Black Pepper freshly ground, to taste

Lemon and Lime Ceviche Salad

The refreshing experience of ceviche is celebrated in this Lemon and Lime Ceviche Salad.

Method

  1. In a large-sized bowl combine prawns, scallops, onion, cucumber, tomato, jalapeno, coriander, olive oil, salt and pepper. Stir through the lemon and lime juice.

  2. Cover the bowl and refrigerate for 1 hour. The prawns and scallops should have turned white (opaque).

  3. Serve in a martini glass or lay it out beautifully on a fancy plate and Enjoy!

This recipe is healthy, flavoursome, and oh-so easy to prepare! The perfect addition to your summer BBQ lunch or dinner.
