  • 1 BBQ Chicken shredded
  • 1 Tsp Paprika ground
  • 1 tsp Coriander Ground
  • 1 Can Of Diced Tomatoes With Mixed Herbs
  • 1/4 Cup Fresh Chopped Coriander
  • 1 Tsp Cumin Ground
  • 1 cup Sour Cream
  • 1 Packet Corn Chips
  • 1 Can Corn Kernels drained
  • 1 Can Black Beans drained and rinsed
  • 1/4 cup Jalapenos sliced
  • 1 cup Cheese grated

Who doesn’t love Nachos?!

Nachos are tasty. Unfortunately, the usual stuff we add to it aren’t considered healthy. Boooo. So, to make it healthier, we load it up with beans, corn, meat and more. Loaded Nachos is a healthy, filling and delicious meal that the whole family will love. It’s like you’re having snacks but more nutritious and makes a really satisfying lunch or dinner. If you don’t want it too spicy, skip the jalapenos. It tastes just as good!

Method

  1. Preheat the oven to 180 degrees

  2. Cook the black beans in a saucepan on medium heat adding cumin, coriander and paprika. Cook for approximately 2 minutes until it starts to smell good then set aside.

  3. In a baking dish, place the corn chips at the bottom, then mix through half of the cheese.

  4. Place the chicken, corn, black beans and tomatoes on top and scatter the Jalapenos and the rest of the cheese.

  5. Place in the oven until the cheese is melted and dish is warmed through, approximately for 20 minutes.

  6. Top with sour cream, coriander and serve immediately.
