  • 300 g Macaroni cooked
  • 180 g Cherry Tomatoes 1 punnet
  • 180 g Baby Spinach
  • 4 Shallots finely chopped
  • 250 g Ham diced
  • 1 cup Breadcrumbs
  • 1/2 cup Cheese grated
  • Sauce
  • 80 g Butter
  • 1.5 cups Milk
  • 3 tbsp Flour
  • 1 cup Cheese grated
  • 1 tbsp Dijon Mustard
  • 1 tbsp Seeded Mustard

Schmancy Macaroni Cheese

Macaroni Cheese can be a bit boring but rest assured this one is Schmancy, super delish & easy to whip up in no time! It has a bit more ‘grunt’ than the standard macaroni and cheese, so the grown up’s in the room won’t complain!

Method

  1. Melt butter in saucepan and add flour and whisk. Cook for 2 minutes stirring and whisking. Slowly add milk and stir with whisk over medium heat. Keep whisking for 3 minutes until sauce starts to thicken. Add cheese and mustard and stir through.

  2. Mix sauce into the macaroni, stir through spinach, shallots, ham and tomatoes and pour into a greased pie dish.  Top with breadcrumbs and cheese and bake for 25 minutes at 180 degrees until golden brown.

Recipe Hints and Tips:

  •  Schmancy Macaroni Cheese is not suitable for freezing.  It may be kept sealed in an air tight container in the fridge for up to three days.
  • For a vegetarian version, feel free to leave out the ham.
