There’s something very wholesome about making your own jam, especially if its as deliciously simple as this Strawberry and Lime Chia Jam.

It takes just 20 minutes to make, is vegan, gluten-free and free of processed sugars. Slather it on your toast, scones or sandwiches, or use it to top your cookies or even stir through your morning porridge, it really is that delicious. The strawberries are naturally so sweet, and the lime gives it a stunning tangy kick. Yum!

 

Method

  1. Pop the chopped strawberries, the lime zest, the lime juice, the chia seeds and, if you're using it, the maple syrup, into a blender. You might also need to add a few tablespoons of water to help with the blending. Pulse on high until the strawberries are well blended.

  2. Pour the mixture from the blender into a small saucepan and heat on a medium heat until it starts to bubble. Reduce the heat and simmer the mixture until the jam starts to thicken, about 5-7 minutes.

  3. Remove from heat and immediately pour into a thick sided jar. Allow to cool completely before storing in the fridge for up to one week.
