Using a rolling pin lightly crush cornflakes into small crumbs.
Transfer to a small dish.
Combine chicken, egg, rind, juice and stuffing mix in a large bowl.
Season with salt and pepper.
Roll tablespoons of mixture into balls, roll into cornflakes.
Place on tray, spray with cooking oil.
Cook for 20mintues or until chicken is cooked through.
