I’m a sucker for the old Pineapple or Banana Fritters (you can use this same recipe for both).

It is deliciously simple.

Eat Banana Fritterse on their own, or with a scoop of vanilla ice cream for a quick and easy dessert!

Method

  1. Sift flour and baking powder into a bowl and whisk in water until batter is lump free.

  2. Dust bananas in plain flour.

  3. Using a fork, dip them in batter to coat and use a 2nd fork to drop them into the hot oil.

  4. Fry until golden brown. (2-3 minutes)

  5. Drain on paper towel and dust with a little icing sugar.

  6. Serve with maple syrup and ice-cream

Recipe Hints and Tips:

  • Banana Fritters are suitable to freeze for up to two weeks.
  • Lay in an airtight container between sheets of baking paper.
