Queen Cake is super cute and deliciously wicked. They’re perfect for kid’s parties. These are traditionally cooked in teacups, you can however, bake in a standard cake tin. Just cook for a little longer.

Ingredients

  • 2 Eggs
  • 1 cup Flour
  • 2 tsp Baking Powder
  • 125 grams Butter
  • 1/4 cup Milk
  • 1/2 cup Caster Sugar
  • 1/2 cup Sultanas
  • 1 tsp Vanilla Extract


Method

  1. Preheat oven to 190 degrees.
  2. Cream Butter and Sugar until very fluffy.
  3. Add eggs one at a time mixing well in between. Set aside.
  4. Sift plain flour and baking soda into a mixing bowl.
  5. Add sultanas to flour and mix through.
  6. Add creamed mix to the flour. Fold together.
  7. Add the milk. Mix together well.
  8. Bake for 15 mins.

Notes

Recipe Hints and Tips:

  • Queen Cake is suitable to freeze for up to three months.
  • Omit sultanas and add 1/2 cup of your choice of filling.
  • If using canned berries add lastly as colour bleeds into mix and makes mixture pinkish.
  • Serve with lemon or orange icing.  These cakes are traditionally cooked in teacups!!!
