Watermelon Granita | Stay At Home Mum

Freeze a long red chilli for a few hours and grate a small amount over the top of the granita for a little heat kick.

Method

  1. Blitz the watermelon in a food processor or blender. Heat the water and sugar in a small saucepan over medium-low heat until dissolved, set aside to cool.

  2. Combine all ingredients in a large metal pan and freeze for 4 to 5 hours.

  3. Scrape the top with a fork and place the shavings in a glass to serve.

  4. Garnish with small fresh mint leaves

Recipe Hints and Tips:

  • Watermelon Granita is best made on the day you are serving it.
  • If you don't have time to use the fork, you can place the mixture in a food processor or blender and make it into a slushie!
  • Add a splash of vodka for an adults only version!
