White Bean Salad Lunch Bowl
A fresh, delicious vegetarian lunch bowl that is filling – and totally good for you. This only takes a minute or two to put together. I’ve used Caramelised Vinegar for the dressing, but you can use anything you like. If you are trying to be really good, perhaps drizzle the salad with a little olive oil and some lemon juice.
Drain the tin of cannellini beans and rinse well.
Finely dice the garlic, Spanish Onions, and cherry tomatoes.
Place all the ingredients into a bowl and mix well to combine.
