Beef Tortilla Stack tastes so good and you can even make your own tortillas, home made always tastes the best!! Beef Tortillas stacks work best for dinner.

Ingredients:

  • Beef Tortilla Stack | Stay at Home Mum500 grams Beef Mince
  • 1 tablespoon olive oil
  • 1 brown onion finely chopped
  • 1 small red capsicum
  • 1 tablespoon crushed garlic
  • 2 tablespoons tomato paste
  • 1 small can red kidney beans
  • 5 x medium tortillas
  • 1 cup grated cheese

Heat the oil in a frying pan and cook the onion, garlic and capsicum until tender. Add the mince and cook until well browned.

Add the tomato paste, the mexican beans (drained) and a small splash of water to moisten. Simmer for five minutes.

Preheat the oven to 180 degrees. Grease a cake tin or springform pan, place one tortilla on the base, spoon the mince mixture over the top, sprinkle with a small amount of cheese, keep repeating until you finish with a tortilla on top. Sprinkle with more cheese and bake in the oven 25 minutes or until golden. Cut into wedges and serve with salad and sour cream.

    I do a half a capsicum, because my kids don't like it and also add a small can of corn and a bit of chopped mushroom, with a teeny bit of pasta sauce. I serve it with guacomolli (or just plain mashed up avocado!) and sour cream on top. SO yummy! :)
